Quick Pickled Succotash

This is a really simple garnish that can be used with any type of vegetable that you might have in your kitchen.

1/2 cup water

1 cup vinegar, champagne or white wine vinegar work great

1/2 cup sugar

salt to taste

red pepper flake to taste

vegetables cut to fit within the jar (cauliflower, green beans, onions, cucumbers, shallots all work well)

Heat the water, vinegar, and sugar to a boil until the sugar completely dissolves. Chop the vegetables and fit them into a wide mouthed jar that can seal. Pour the hot pickling liquid over the vegetables and allow them to sit for 8 hours or up to overnight in the refrigerator. This is not a pickle recipe for long term storage. Also, many quick pickles for a garnish only need a short time in the liquid. If you are going to be delayed in serving, drain off the liquid and put them back in the jar and in the refrigerator. Serve as a garnish.
